For 45 years, the Norwegian community in Minnesota has gathered to celebrate Norway’s Constitution Day over great food, colorful flags, national songs, and inspiring speakers. Syttende Mai Minnesota is proud to continue this cherished tradition at Norway House, hosted in the Sundet Aula on Saturday, May 16

Colonel Christoffer Thomas Knutsen, Norway's Military Attaché and Assistant Defense Attaché in Washington, D.C., will speak about his experience serving his country in the Norwegian Army and describe how dynamics of NATO have evolved since Finland joined in 2023 and Sweden in 2024.


Pre-Dinner Reception: 5:00 PM–6:00 PM (cash bar available)

Banquet: 6:00 PM–8:00 PM

—A full table is eight (8) people.

—This event has open seating—places are not reserved in advance.

—However, purchasing a full table of eight can ensure a reserved location for you and your guests with a sign and preferred seating.

—We will email table purchasers to gather the names of those sitting at the table, their dinner preferences, and any dietary restrictions. Please complete this information by the end of the day on Monday, May 11, when registration closes.

Menu

First Course

• Mixed greens, seasonal berries, cranberries, goat cheese, maple roasted walnuts, and raspberry vinaigrette (salad pre-set)

Dinner Options

• Grilled beef tenderloin marinated with aromatic fresh herbs and mushrooms wine sauce served with asparagus and steam Yukon potatoes with fresh dill and clarified butter

• Lemon pepper roasted salmon with creamy dill sauce and fresh lemon served with asparagus and steamed yukon potatoes with fresh dill and clarified butter

—or—

• Healthy vegan bowl roasted butternut squash, spinach, quinoa, carrots, avocado, wild mushrooms drizzled with balsamic vinegar 

Dessert 

• Scandinavian sponge cake filled with chocolate mousse, whipped cream, raspberry jam and fresh bananas. garnished with whipped cream, fresh strawberries, and almonds.
