From Orchard to Oven: Apples in Celtic & Nordic Traditions
Celebrate the bounty of the season with a hands-on cooking class that brings together the apple traditions of Ireland and Scandinavia! In this cozy collaboration between Celtic Junction and Norway House, we’ll explore how two northern cultures have made the most of this beloved fall fruit in both sweet and savory ways.
Together, we’ll prepare two delicious dishes:
Nordic Pan-Fried Apples with Lamb Shanks and Roasted Cabbage
Biddy’s Apple Cake with Caramel Sauce, an Irish favorite
As the dishes simmer and bake, we’ll sample a variety of locally grown apples and sip crisp local cider while learning about the culinary heritage of these recipes.
Whether you’re an experienced home cook or just curious about traditional flavors, this class offers a delicious opportunity to learn new skills, celebrate seasonal produce, and enjoy a festive afternoon of cooking and sipping.
The lamb used in this class will be provided by instructor Heidi Eger, who owns Radicle Heart Farm. Shelagh Mullen brings her extensive knowledge and love of Irish cooking to the dessert portion of the class.
